Triple Fruit Coleslaw

INGREDIENTS

  • 1 (8 oz) can pineapple chunks in juice
  • ½ green cabbage, finely chopped
  • ¼ red cabbage, finely chopped
  • 1 large apple, cubed small
  • 1 cup celery, finely chopped
  • ½ carrot, shredded
  • ¾ cup raisins
  • 1 cup low-fat Greek yogurt, plain
  • 2 Tbsp cider vinegar or lemon juice
  • Salt and pepper to taste

DIRECTIONS

Wash and chop all produce. Drain pineapple, reserving the juice in a bowl. Combine cabbages, pineapple tidbits, cubed apple, chopped celery, shredded carrot, and raisins in a large bowl. In a small bowl, blend together the Greek yogurt, vinegar (or lemon juice) and 3 Tbsp of reserved pineapple juice. Pour dressing over veggies and toss to mix well.  Cover and chill for 2-4 hours.
