Stoplight Salad




INGREDIENTS
- 1 can (15 oz) chickpeas, rinsed and drained
- 2 medium zucchini, diced
- 1 ½ cups corn
- 1 red bell pepper, chopped
- 1 ½ Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- 1 Tbsp olive oil
- ½ Tbsp honey
- ¼ tsp salt
- ⅛ tsp black pepper
- ⅛ tsp cayenne pepper

DIRECTIONS
Place chickpeas, zucchini, corn, and bell pepper in a medium bowl. In a separate small bowl, mix together lemon juice, vinegar, olive oil, honey, salt, black pepper, and cayenne pepper. Pour over salad and toss to combine. Allow to sit for 30 minutes.
