Sneaky Mashed Potatoes

INGREDIENTS

  • 1 head cauliflower, chopped
  • 2 ½ lbs potatoes, peeled and cubed
  • ¼ cup olive or canola oil
  • ¼ cup butter (preferably made with canola or olive oil)
  • ½ cup low-fat plain Greek yogurt
  • ¼ cup skim or low-fat milk
  • 2-3 garlic cloves, finely chopped
  • ¼ tsp paprika (optional)
  • Salt and pepper to taste

DIRECTIONS

Boil potatoes and cauliflower together till tender. Drain and mash potatoes, cauliflower, oil and butter. Add rest of ingredients, mix thoroughly, and enjoy!
