Sneaky Mashed Potatoes

INGREDIENTS
- 1 head cauliflower, chopped
- 2 ½ lbs potatoes, peeled and cubed
- ¼ cup olive or canola oil
- ¼ cup butter (preferably made with canola or olive oil)
- ½ cup low-fat plain Greek yogurt
- ¼ cup skim or low-fat milk
- 2-3 garlic cloves, finely chopped
- ¼ tsp paprika (optional)
- Salt and pepper to taste

DIRECTIONS
Boil potatoes and cauliflower together till tender. Drain and mash potatoes, cauliflower, oil and butter. Add rest of ingredients, mix thoroughly, and enjoy!
