White Bean Dip

INGREDIENTS

  • 1  can (16 oz) of no salt added butter beans (or other white bean of choice)
  • ¼ cup nonfat plain yogurt
  • ½ Tbsp lemon juice
  • ¼ tsp dried basil
  • Zest of one lemon
  • ⅛ tsp salt
  • ⅛ tsp black pepper
  • 2 large carrots, sliced
  • 2 red bell peppers, sliced

DIRECTIONS

Combine the first seven ingredients in a food processor until well incorporated and smooth.  Serve with raw sliced carrots and bell peppers.
