GOMAN ETHIOPIAN COLLARD GREENS

INGREDIENTS

2 Tbsp olive oil (or avocado oil)
1 white onion, chopped (about 1½ cups)
8 garlic cloves, chopped
¼ tsp cardamom
¼-½ tsp smoked paprika (optional, depending on how spicy you like)
1 tsp ginger powder
1 tsp turmeric
1 tsp salt
5 tomatoes, chopped (about 2 cups)
1 bunch collard greens, destemmed and finely chopped (can substitute w/ other greens like mustard)
½ Tbsp honey

DIRECTIONS

Heat oil in a large saucepan over medium heat. Add onion and cook until soft, about 3 minutes. Stir in garlic, cardamom, smoked paprika (optional, depending on how spicy you like), ginger, turmeric, and salt. Cook until fragrant, about 1 minute. Add tomatoes and cook for another minute, stirring periodically. Add collard greens and honey and constantly stir until the greens have wilted. Cover the saucepan, reduce heat to simmer for about 10 minutes. Serve with whole wheat bread or pita or as side dish.
