EASY BLENDER KIWI PANCAKES

INGREDIENTS

3 Zespri Sungold kiwifruit
1 large, ripe banana
¾ cup low-fat milk
1 large egg
2 Tbsp sugar
1¾ cup whole-wheat flour
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
Cooking spray
Honey or maple syrup for serving

DIRECTIONS

Heat griddle to 350° or skillet to medium high. Peel and chop the Sungold kiwifruit and set aside one of the chopped kiwis to the side for topping. Add the other two chopped kiwifruit, banana, low-fat milk, egg, and sugar to a blender and blend until smooth. In a medium bowl, add the dry ingredients and mix. Then, add the dry ingredients to the wet ingredients and blend until all ingredients are well incorporated (adding a little water if needed for consistency). Spray the pan with cooking spray. When skillet is hot, pour the pancake batter into the pan to form circles about 2.5-3 inches in diameter (adding some chopped kiwi to the batter is optional here). Flip when edges dry and bubbles start to form in the middle, about 2 to 3 minutes. Cook the other side until browned, about 2 minutes longer. Repeat with remaining batter. Serve the pancakes immediately with chopped kiwi on top and a drizzle of maple syrup or honey. Enjoy!
