Corn Guacamole

INGREDIENTS

3 large ripe avocados
1 (15 oz) can corn (no salt added), rinsed and drained
½ cup chopped white onion
¼ cup finely chopped cilantro
Juice of 1 lime
½ tsp garlic powder
½ tsp salt
¼ tsp ground cumin
4 oz queso fresco, crumbled

DIRECTIONS

Using a spoon, scoop the flesh of the avocados into a serving bowl and then mash. Add the corn, onion, cilantro, lime juice, garlic, salt, and cumin. Stir until well mixed. Lastly, add the crumbled queso fresco and stir to combine. Serve with baked tortilla chips or on top of fish tacos.
