CHILE RELLENOS
INGREDIENTS
6 large poblano peppers
½ Tbsp olive oil
⅛ tsp salt
6 Roma tomatoes, cut in quarters
1 large white onion, sliced into wedges
2 small jalapeños, cut in quarters
6 garlic cloves, cut in half
1 Tbsp olive oil
¼ tsp salt
1 (15.5oz) can black beans (no salt added), drained and rinsed
¼ cup + ¼ cup crumbled queso fresco or shredded Monterey jack cheese
½ tsp cumin
½ tsp salt
¼ tsp chili powder
¼ tsp coriander

DIRECTIONS
Preheat the oven to 400°F. Place the 6 poblano peppers on a baking sheet and toss with ½ Tbsp of olive and ⅛ tsp of salt. On another baking sheet, place the tomatoes, onions, jalapenos, and garlic, and then toss them with 1 Tbsp of olive oil and ¼ tsp of salt. Place both pans in the oven and cook for 15 minutes, then flip the poblano peppers and return the pan to the oven. Cook another 10-15 minutes. Remove the two pans from the oven and lower the temperature of the oven to 350°F.
For the filling: Mix the beans, ¼ cup of cheese, cumin, salt, chili powder, and coriander in a medium bowl. Take ⅓ of the roasted onions, finely chop them, and then add them to the bean filling mixture and stir.
For the sauce: Place the remaining onions, tomatoes, jalapenos, and garlic into a large food processor or blender and blend until smooth. Set this sauce aside.
Prepare the poblanos: One at a time, hold the poblanos under running water and rub off the outer skin. Then, slice the poblanos on one side to open and remove the seeds inside. Next, in a 9 x 13 inch greased baking dish, pour some of the roasted tomato sauce to coat the bottom (about half the sauce). Place the peppers on top of the sauce and fill each one with the black bean mixture. Pour the rest of the sauce over the top. Sprinkle with the remaining ¼ cup of cheese.
Cover with foil and bake 15 minutes in the oven at 350°F, or until the filling is warm and the cheese is melted, then uncover and bake another 5 minutes. Remove from oven and enjoy!
