INGREDIENTS
1 Tbsp canola oil
2 poblano chiles, deseeded and diced
1 yellow squash, finely diced
1 zucchini, finely diced
1 (15oz) can fresh corn kernels, low sodium
2 Roma tomatoes, finely diced
4 garlic cloves, minced
½ tsp salt
½ tsp onion powder
1 (4oz) can chopped green chiles, undrained
¼ cup chopped fresh cilantro

DIRECTIONS
Heat oil on medium-high heat, then add the poblanos, yellow squash, and zucchini. Once the squash is tender, add the remaining ingredients except for the cilantro. Cook for about 5 minutes, or until the flavors are well incorporated. Remove from heat and then top with the chopped cilantro. Serve as a side with chicken or fish or as a vegetarian taco filling.
Optional: Add one can (15oz) of low sodium black beans for added fiber and protein!
