Brown Spanish Rice
INGREDIENTS
- 2 carrots
- 1 onion
- 2 cloves garlic
- 1 red or green pepper
- 5 small tomatoes
- 2 ½ cups brown rice
- 5 cups water
- 1 ½ tsp salt
- ¼ tsp each: pepper, thyme, turmeric, paprika, celery salt
- 1 bay leaf
- 4 Tbsp olive oil, divided

DIRECTIONS
Chop all vegetables, and heat 2 Tbsp of oil in a large pot. Add carrots, onion, and garlic and cook 5 minutes over medium heat. Add pepper and tomatoes, cook another 5 minutes. Add rice, water, salt, and spices. Bring to a boil, reduce to a low simmer and cover. Cook until all the water is absorbed. Drizzle with last 2 Tbsp of oil.
