Sampada Xu is the Research Coordinator at Brighter Bites. Her public health journey began at the University of Houston, where she completed her bachelor’s degree in Public Health and a minor in Psychology. She then earned her master’s degree in Public Health with a concentration on Health Promotion and Behavioral Sciences from the University of Texas School of Public Health.

Born and raised in Nepal, Sampada has always had a deep appreciation for food as an important part of her cultural heritage. She loves learning about different cultures and their cuisine, understanding their significance, and exploring how diverse and healthy foods can be. Her passion for food extends to her travels, where she enjoys experiencing and trying local foods. She believes that food plays a significant role in travel, and it is often a memorable part of the experience.

Sampada is deeply interested in public health because she believes that improving access to nutritious food and health education for underprivileged communities is crucial. Outside of Brighter Bites, she enjoys hiking, practicing Pilates, and working out with her husband. Through her work at Brighter Bites, she is excited to promote healthy eating habits and empower communities with nutritious food and education.
