She received her undergraduate degree in nutrition and completed the Coordinated Program in Dietetics at The University of Texas at Austin. She is a Registered Dietitian Nutritionist and also a Licensed Dietitian for the state of Texas.
From the border city of Nuevo Laredo, Tamaulipas, Mexico, Rebeca grew up embracing her bi-cultural roots and enjoys sharing her story with those around her. Curiosity and her love for science cultivated her interests in different fields including botany, biochemistry, physiology, and economics. She also enjoys working with children. It was just a matter of time for Rebeca to discover her passions were all part of nutrition, leading her to pursue a career in dietetics.
Rebeca’s Brighter Bites journey began as a dietetic intern in June 2017. For a month, she participated in every aspect of the Brighter Bites formula and found in it a one-of-a-kind opportunity to advocate for nutrition in a fun and nurturing environment. Rebeca is passionate about learning and understanding how people from different cultures and backgrounds perceive food, medicine, and health. Her goal is to motivate children and their parents alike to lead vibrant, healthy lives by empowering them to make healthy food choices through nutrition education.
Rebeca is fluent in English and Spanish. She studied abroad in Sicily, Italy to gain a deeper understanding in international nutrition and has a Business Foundations Certificate from The University of Texas at Austin. She enjoys exploring the outdoors and the live music scene in Austin, visiting coffee shops, traveling, reading, dancing, and learning something new every day. Rebeca is excited to bring her nutritional science background and love for community outreach and education to the Brighter Bites team!
