Bethany Dawson, MPH

Program Manager, Internship and Volunteer Programs
Brighter Bites, Austin

Bethany Dawson is the internship and volunteer program manager for Brighter Bites in Austin. In her role, she developed and now leads the implementation of the internship program and volunteer management system for all of Brighter Bites’ cities and also helps manage the Austin team’s daily programming. Bethany recognizes the huge impact that Brighter Bites interns and volunteers have on the success of our programs across the country, and she is passionate about creating robust, meaningful experiences for both of these invaluable groups of partners.

Bethany was born and raised in Brownsville, Texas. She graduated from Trinity University in San Antonio with a B.S. in Biology and went on to serve a year as an AmeriCorps member with City Year San Antonio, where she worked as a full-time math tutor in a low-income middle school. Bethany discovered Brighter Bites at the UT Health Science Center School of Public Health in Houston while working on her master’s thesis, an adaptation of the CATCH Middle School curriculum for use in faith-based communities. She joined Dr. Shreela Sharma’s research team as a part-time graduate assistant in October 2014. After graduating with her Master’s of Public Health in Epidemiology in May 2015, she moved to Austin to join Brighter Bites Austin launch team full-time as a Program Coordinator.

In her free time, Bethany enjoys playing board games and working out with the outdoor fitness program, Camp Gladiator. She makes it a point to visit at least one new place every year and to learn about new cultures through their foods. Bethany attempts to stay connected to her own roots by drooling over the Great British Bake-Off and trying her best to replicate her mom’s delicious, healthy cooking.
