We had the BEST time with the 3rd graders at Kashmere Gardens Elementary!⁠

The class had a blast making our “Better Than Ranch” dip and “Yellow Smoothie” recipe. It was the perfect mix of hands-on learning and tasty fun — every table got to measure, mix, and create their own recipe! 🥕🍋🥰⁠

The kiddos were so excited, and they even received take-home recipe cards to share with their families. Nothing beats seeing their smiles and curiosity in action!

We were lucky to receive donated Fruit Bliss Mini Apricots in NYC, enjoyed by hundreds of Brighter Bites families—including those at PS 19Q in Queens 💛⁠

We swapped raisins for the fresh, flavorful apricots in our Crunchy Celery & Apple Salad, and families loved it. Fresh swap, big flavor! 🍎🥬⁠

Sweet Potato Harvest Salad — a colorful, crunchy, and nutritious addition to your holiday table.⁠
Ingredients:⁠
* 4 cups sweet potato, diced (about 2–3)⁠
* 1 cup red apple, diced⁠
* ¼ cup pomegranate seeds⁠
* 4 Tbsp unsalted pumpkin seeds (pepitas)⁠
* 1 Tbsp apple cider vinegar⁠
* 1 tsp + ½ Tbsp extra virgin olive oil⁠
* ¼ tsp salt⁠
* ⅛ tsp black pepper⁠
⁠
Directions:⁠
1. Preheat oven to 400°F. Drizzle diced sweet potatoes with 1 tsp olive oil and roast for 10 minutes. Let cool.⁠
2. In a large bowl, combine sweet potatoes, apples, pomegranate seeds, and pepitas.⁠
3. Whisk remaining ½ Tbsp olive oil, apple cider vinegar, salt, and pepper. Pour over salad and toss lightly.⁠
⁠
💚 Nutrition & Cost: Approx. 1 cup per serving; 183 calories, 35g carbs, 4g fat, 3g protein, 5g fiber. Makes 4 servings — only $1.68 for a family of four!
