🍁 Try something new this Thanksgiving! 🥗✨⁠

Sweet Potato Harvest Salad — a colorful, crunchy, and nutritious addition to your holiday table.⁠
Ingredients:⁠
* 4 cups sweet potato, diced (about 2–3)⁠
* 1 cup red apple, diced⁠
* ¼ cup pomegranate seeds⁠
* 4 Tbsp unsalted pumpkin seeds (pepitas)⁠
* 1 Tbsp apple cider vinegar⁠
* 1 tsp + ½ Tbsp extra virgin olive oil⁠
* ¼ tsp salt⁠
* ⅛ tsp black pepper⁠
⁠
Directions:⁠
1. Preheat oven to 400°F. Drizzle diced sweet potatoes with 1 tsp olive oil and roast for 10 minutes. Let cool.⁠
2. In a large bowl, combine sweet potatoes, apples, pomegranate seeds, and pepitas.⁠
3. Whisk remaining ½ Tbsp olive oil, apple cider vinegar, salt, and pepper. Pour over salad and toss lightly.⁠
⁠
💚 Nutrition & Cost: Approx. 1 cup per serving; 183 calories, 35g carbs, 4g fat, 3g protein, 5g fiber. Makes 4 servings — only $1.68 for a family of four!

On September 23rd, Brighter Bites officially began delivering fresh produce and nutrition education across the city, kicking off our first full year of programming since merging with locally founded nutrition assistance initiative +BOX.⁠

✨ 6,000 students receiving nutrition lessons⁠
