Bringing The Heat Honeydew Salad
INGREDIENTS
- 1 medium honeydew melon, chopped
- 1 jalapeño, seeded and diced
- 1 Tbsp honey
- ½ Tbsp olive oil
- Juice of ½ lime
- ¼ tsp salt
- ¼ tsp chili powder or Sriracha
- ⅓ bunch cilantro, chopped
- 3 Tbsp pepitas or chopped peanuts

DIRECTIONS
Place melon and jalapeño in a medium bowl. In a separate small bowl, whisk together honey, olive oil, lime juice, salt, and chili powder. Pour dressing over melon and jalapeño and toss. Top with cilantro and pepitas or peanuts.
