Eda-Yummy Salad

INGREDIENTS

  • 1 slice bacon
  • 2 Tbsp red wine vinegar
  • 1 Tbsp olive oil
  • ½ tsp salt
  • 1 bell pepper, chopped
  • ½ tsp black pepper
  • ½ onion, chopped
  • 3 plum tomatoes, chopped
  • 1 clove garlic, minced
  • 2 cups corn kernels
  • 1 (16 oz) bag frozen, shelled edamame, thawed

DIRECTIONS

Heat pan over medium heat and cook bacon until crisp.  Remove bacon from pan and chop.  Remove drippings from pan.  Heat olive oil in pan.  Add bell pepper, onion, and garlic and cook for 5 minutes, stirring occasionally.  Add corn and edamame and cook for 5 minutes, stirring occasionally.  Stir in vinegar, salt, pepper, tomatoes, and bacon.  Cook for 1 minute, stirring occasionally.  Serve warm or cold.
