Fiesta Cornbread
INGREDIENTS
- 1 cup white whole wheat flour
- 1 cup cornmeal
- 4 tsp baking powder
- 1 tsp salt
- 3 Tbsp honey
- 2 eggs
- 1 cup skim milk
- ¼ cup canola or olive oil
- ½ red bell pepper, chopped
- 3 green onions, chopped
- 1 cup fresh or frozen corn kernels

DIRECTIONS
Preheat the oven to 425°F. Combine flour, cornmeal, baking powder, and salt in a bowl. In a separate bowl, mix honey, eggs, skim milk, and oil together. Form a well in the center of the dry ingredients and add the wet ingredients. Mix until combined then stir in pepper, onions, and corn. Pour batter into an 8 inch pan and bake for 20 minutes.
